Yes, the gluten-free program is a genuine dedicated cycle, not a rebranded basic setting. Gluten-free dough needs a different mix-and-rise profile because there's no gluten network to develop. This program adjusts the knead and rise timing accordingly so you get a proper risen loaf instead of a dense brick.
The Dough setting stops before baking, so you can use it for pizza dough, dinner rolls, cinnamon rolls, and pretzels. The Jam setting makes fresh preserves. The Bake setting lets you bake dough you prepared elsewhere, or add extra baking time to a finished loaf.
